“Better Than Takeout” Easy Fried Rice

This “Better Than Takeout” Easy Fried Rice Recipe was one of the first dishes my mom taught in her cooking classes! It uses day-old cooked rice stir-fried in a hot wok with oil, scrambled eggs, diced ham, peas, red bell pepper, and green onions, then seasoned with soy sauce, salt, black pepper, and sesame oil, with an optional touch of ketchup for a slightly sweet note.

Ingredients

  • 4 cups - rice
  • 3 tablespoons - cooking oil
  • 3 - eggs
  • 1 tsp - salt
  • 1 cup - ham
  • 1 cup - cooked peas
  • ½ - red pepper
  • 3 sprig - green onion
  • 1 tbsp - soy sauce
  • 1 tsp - sesame oil
  • ½ tsp - black pepper
  • 1 tbsp - ketchup

Instructions

  1. Heat the wok, dutch oven, pot, or frypan over medium heat.
  2. Add 1 tbsp of oil and heat for 30 seconds.
  3. Break the eggs into a small bowl, add ¼ tsp of salt, and whisk until yolk and white are thoroughly combined.
  4. Scramble the eggs until still moist, and not overdone. Turn off your heat, and put the eggs back in the small bowl. Break up the eggs with chopsticks and set aside.
  5. Reheat your pan over high heat. Add 2 tbsp of oil and heat for 30 seconds.
  6. Add your rice and stir fry until hot, about ten minutes.
  7. Add ham, peas, red peppers and green onions, and stir fry until all are combined and warmed throughout.
  8. Stir in the cooked eggs.
  9. Add the soy sauce, 3/4 tsp salt, pepper, sesame oil, and ketchup (if using) to taste.
  10. Serve immediately.
