
Bircher Muesli
This Bircher muesli is the perfect make-ahead breakfast. Unlike many traditional recipes, the grated apple is mixed in the night before, so it's ready to enjoy the next morning. Made with Greek yogurt instead of heavy cream, it's still wonderfully creamy while also providing plenty of protein. One batch keeps well in the refrigerator for several days, making it perfect for meal prep.

Ingredients
- 1 - apple
- ¼ cup - mixed nuts
- 1 cup - quick cooking oats
- 2 tablespoons - raisins
- 220 milliliters - almond milk
- 1 tsp - lemon juice
- 1 tsp - honey
- ⅔ cup - Greek yogurt
Instructions
- Coarsely grate the apple and toss it with the lemon juice. Finely chop the nuts and add them to a bowl along with the rolled oats, raisins, honey, milk, and grated apple. Stir well, cover, and refrigerate overnight.
- The next morning, stir in the Greek yogurt. Taste and add a little more honey, if desired. Divide the bircher muesli between 2 bowls and serve with fresh fruit.
