Ingredients

  • 1 can - black beans
  • 1 can - garbanzo beans (chickpeas)
  • 1 - red bell pepper chopped
  • ½ cup - cucumber
  • ½ cup - cilantro
  • ¼ cup - fresh mint
  • 1 tbsp - Za'atar seasoning
  • 2 cloves - garlic
  • 6 tablespoons - lime juice
  • ½ cup - extra virgin olive oil
  • 2 - shallots
  • 1 - jalapeño pepper
  • 3 tablespoons - honey
  • 1 tsp - salt
  • ½ tsp - cumin
  • ¼ tsp - cayenne pepper
  • ¼ - fresh ground black pepper

Instructions

  1. In a small bowl, whisk together the lime juice, olive oil, garlic, honey, cumin, black pepper and cayenne pepper. Stir in the chopped jalapeño or banana peppers.
  2. In a large mixing bowl, combine the black beans, garbanzo beans, bell pepper, cucumber, cilantro, mint, and Za'atar seasoning.
  3. Pour the dressing over the salad and toss until well combined.
  4. Serve immediately or refrigerate in an airtight container for up to 3 days.
