Ingredients
- 1 can - black beans
- 1 can - garbanzo beans (chickpeas)
- 1 - red bell pepper chopped
- ½ cup - cucumber
- ½ cup - cilantro
- ¼ cup - fresh mint
- 1 tbsp - Za'atar seasoning
- 2 cloves - garlic
- 6 tablespoons - lime juice
- ½ cup - extra virgin olive oil
- 2 - shallots
- 1 - jalapeño pepper
- 3 tablespoons - honey
- 1 tsp - salt
- ½ tsp - cumin
- ¼ tsp - cayenne pepper
- ¼ - fresh ground black pepper
Instructions
- In a small bowl, whisk together the lime juice, olive oil, garlic, honey, cumin, black pepper and cayenne pepper. Stir in the chopped jalapeño or banana peppers.
- In a large mixing bowl, combine the black beans, garbanzo beans, bell pepper, cucumber, cilantro, mint, and Za'atar seasoning.
- Pour the dressing over the salad and toss until well combined.
