Fruity and cold — but still in "serious cocktail" territory, this fresh summer drink is perfect for a warm night on the patio or a fancy summertime brunch. To make assembly easy, you can make the blackberry syrup ahead of time and refrigerate it until you're ready to imbibe.

Ingredients

  • 1 cup - blackberries
  • ½ cup - water
  • ½ cup - sugar
  • ¼ cup - lime juice
  • 4  - blackberries
  • 2 ounce - bourbon
  • ½ ounce - syrup
  • ½ Ounce - elderflower liqueur
  • 2 dashes - ginger beer

  1. To make the blackberry syrup: In a small pot combine the blackberries, water and sugar. Stir ingredients and bring to a boil. Remove from the heat and let cool for 4 minutes.
  2. Place in a blender and blend on high speed for 3 minutes. Strain mixture and then stir in lime juice. Refrigerate until ready to use.
  3. To assemble the cocktails: In each of two glasses, place two blackberries at the bottom and muddle until smashed and juice is extracted.
  4. Fill the glasses with ice, and then add the whiskey, blackberry syrup, St. Germain and stir for a few minutes until chilled. Finish each with a splash of ginger beer on top.
