Ingredients

  • 1 cup - rolled oats
  • 1 cup - all-purpose flour
  • ¾ cup - brown sugar
  • 1 ½ teaspoons - baking powder
  • ¾ cup - salted butter*
  • 2 cups - blueberries
  • ¼ cup - granulated white sugar
  • 1 tbsp - cornstarch
  • 1 tsp - lemon zest
  • 2 tablespoons - lemon juice

Instructions

  1. Preheat the oven to 350℉. Line a 9X9-inch pan with parchment paper, leaving parchment paper to hang over the sides of the pan.
  2. Whisk together the oats, flour, brown sugar, and baking powder in a large bowl. Mix in the melted butter to create a crumbly texture. Press ⅔ of this mixture into the prepared pan and set aside the rest for later.
  3. In another bowl, stir together the blueberries, sugar, cornstarch, lemon zest, and lemon juice. Smooth the filling over top of the crust and crumble the reserved crust mixture over top.
  4. Bake in the preheated oven for 35-40 minutes or until the topping is golden brown. Serve warm with ice cream or let cool fully before slicing into bars to serve. Enjoy!
