Tips & Tricks (5)
- Choose Day-Old Bread for Structure 🍞Use slightly stale French bread that's 1-2 days old, as it absorbs the custard mixture evenly without becoming mushy, creating that perfect spongy texture.
- Temper Your Eggs Properly 🥚Slowly add hot cream to beaten eggs while whisking constantly to prevent scrambling and ensure a silky, smooth custard base throughout the pudding.
- Water Bath for Even Cooking 🛁Bake the bread pudding in a water bath (bain-marie) to provide gentle, even heat that prevents the edges from overcooking while the center sets perfectly.
- Infuse Vanilla Sauce with Heat 🔥Warm the heavy cream and milk before making the sauce to allow the vanilla extract to bloom and distribute evenly, creating a richer, more aromatic vanilla flavor.
- Toast Bread Cubes Lightly 🍂Lightly butter and toast the bread cubes in the oven for 5-7 minutes before assembling to add subtle flavor and help them maintain structure while absorbing the custard.
