Bread Salad with Arugula

Preheat oven to 200°C (top and bottom heat). Cut bread into bite-sized cubes, place on a baking sheet, and toss with olive oil and a little salt. Roast in the oven for 10 minutes, until nicely crispy.

Meanwhile, wash and halve the tomatoes. Peel and finely dice the shallot and garlic. Heat the remaining oil in a pan and sauté the shallot and garlic with a pinch of salt until translucent.

Add about two-thirds of the tomatoes to the pan and sauté over medium heat for about 5 minutes, until the tomatoes are nicely softened and some juice has collected in the pan. Meanwhile, halve the mozzarella balls and wash the arugula and basil.

Deglaze the pan with balsamic vinegar, simmer gently for about a minute, then remove from the heat. Season the dressing with salt and pepper.

Place the bread cubes in a large bowl, add the mozzarella, arugula, remaining tomatoes, and basil, and toss with the tomato-balsamic dressing. Season with salt and pepper to taste and serve immediately.
