Ingredients

  • 2 cups - tortilla chips
  • 1 cup - mozzarella cheese
  • 2 teaspoons - olive oil or butter
  • 2 - eggs
  • guacamole
  • salsa
  • cilantro
  • bacon or breakfast sausage
  • pinto

Instructions

  1. Preheat oven or toaster to 350°F.
  2. Place the chips on a parchment lined quarter sheet pan or toaster tray, top with cheese and bake for 10 minutes or until cheese begins to melt.
  3. While the chips are baking, heat olive oil or butter in a large suite pan over medium heat. Gently crack the eggs into the skillet and cook for 2-3 minutes, flipping hallway through if desired.
  4. Remove chips and melted cheese from the oven, top with a fried egg and desired toppings.
