4
Slowly pour in heavy cream and bring to a simmer.
5
Season with salt, pepper, garlic powder, onion powder, and mustard powder.
6
Add 1.5 cups of cheddar and 1/2 cup of mozzarella. Stir until fully melted and smooth.
7
Add the cooked pasta and broccoli along with a splash of pasta water. Stir to form a creamy sauce, adding more water as needed.
8
Add the remaining 1/4 cup mozzarella and stir for extra cheesiness.
9
Optional: Transfer to a baking dish, top with more cheddar or mozzarella, and bake at 350°F for 20–25 minutes until golden and bubbly.

Tips & Tricks (5)
- Reserve Pasta Water First 💧Always reserve 1-2 cups of starchy pasta water before draining—this is essential for adjusting sauce consistency and helping it cling to the pasta and broccoli perfectly.
- Bloom Your Spices in Butter 🧈Toast the garlic powder, mustard powder, and onion powder in melted butter for 30 seconds before adding cream to unlock their full flavor potential and eliminate any raw spice taste.
- Add Cheeses at Low Heat 🧀Remove the pan from heat before stirring in both cheeses to prevent them from breaking or becoming grainy—the residual heat will melt them smoothly into a silky sauce.
- Cook Broccoli Separately 🥦Steam or blanch broccoli florets separately until just tender-crisp, then fold in at the end to maintain their vibrant color and firm texture rather than overcooking them in the sauce.
- Emulsify with Fresh Garlic 🧄Use minced fresh garlic in addition to garlic powder—add it to the butter first to infuse the oil, creating a more complex flavor than powder alone can achieve.
