In a large skillet, melt butter over medium heat until it begins to brown and smell nutty.
3
Halfway through the browning process, add the sliced sage leaves and let them crisp up in the butter.
4

Tips & Tricks (5)
- Brown Your Butter Correctly 🧈Watch the butter foam subside and listen for a nutty aroma—this takes 5-7 minutes on medium heat. Stop immediately when you see golden-brown solids at the bottom; over-browning creates a bitter, burnt flavor that ruins the dish.
- Don't Overcrowd the Pan 🍳Cook gnocchi in batches if needed—they need space to develop a light golden crust rather than steam. Crowding releases moisture and prevents the signature tender-outside, slightly-crispy texture.
- Sage Infusion Timing ⏱️Add sage leaves after the butter browns, letting them steep for just 1-2 minutes before adding gnocchi. This preserves the herb's delicate, earthy flavor rather than cooking it into bitterness.
- Starchy Pasta Water is Your Secret Weapon 💧Reserve pasta water before draining and add it gradually (2-3 tablespoons at a time) to create a silky emulsion that coats the gnocchi. The starch helps the sauce cling perfectly without needing cream.
- Finish Cold, Not Hot 🧊Remove the pan from heat before tossing in Parmesan to prevent the cheese from clumping or becoming grainy. This keeps the sauce smooth and luxurious on the plate.
