Instructions

1
|
Preheat the oven to 325 degrees F. Grease and line two 9 inch cake pans with parchment paper.
2
|
Soak cake strips in ice water.
3
|
In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, brown sugar, baking powder, salt, and spices.
4
|
Cut up the butter into small cubes and add to the dry ingredients. Mix on low speed until it resembles wet sand.
5
|
Add the oil, milk, eggs, and vanilla, and mix until just combined.
6
|
Divide the cake batter between the prepared pans. Wrap the cake strips around the outside of the pans.
7
|
Bake for 35-40 minutes or until a toothpick inserted comes out clean. Immediately turn the cakes out onto a wire rack to cool completely.
8
|
Once cool, wrap the cakes in plastic wrap and freeze until ready to decorate.
9
|
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and cream cheese on high speed until smooth. Slowly add the sifted powdered sugar and mix on low speed until fully combined. Once all of the powdered sugar is added, continue beating on low speed until no more lumps or pockets of air remain and the frosting is smooth.
10
|
Secure the first cake layer on the cake stand with a small amount of frosting on the bottom. Using an offset spatula, spread on an even layer of frosting, then place the second cake layer on top.
11
|
Finish decorating the cake as desired. Sprinkle a small amount of cinnamon on top, and serve!

Tips & Tricks (5)

  • Bloom Your Spices 🌟
Toast the ground chai spices (cloves, cardamom, cinnamon, nutmeg, allspice, and ginger) in a dry pan for 30-60 seconds before adding to the batter to intensify their warm flavors and eliminate any raw spice taste.
  • Room Temperature Ingredients 🌡️
Bring eggs, cream cheese, and butter to room temperature before mixing to ensure proper emulsification and a lighter, more tender crumb structure in your cake layers.
  • Oil and Butter Balance ⚖️
Use both neutral oil and unsalted butter in your batter—the oil keeps the cake incredibly moist while butter provides flavor, creating a superior crumb compared to using one or the other alone.
  • Chill Your Frosting 🧊
Refrigerate your cream cheese frosting for 15-20 minutes after making it to achieve the perfect spreadable consistency that won't tear your delicate cake layers during assembly.
  • Level Your Layers 🎂
Use a serrated knife or cake leveler to trim the domed tops of cooled cake layers before frosting, creating flat surfaces that stack evenly and prevent your cake from tilting or sliding.
