Instructions
1
|
In a large bowl, mash the ripe bananas until smooth.
2
|
In a saucepan over low heat, melt the butter together with the dark chocolate. Stir until smooth. Pour the warm chocolate-butter mixture over the mashed bananas.
3
|
Add brown sugar, white sugar, oil, eggs, and vanilla extract. Mix until fully combined and smooth.
4
|
In a separate bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. (Do not add the sugar here.) Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
5
|
Gently fold in 70 g chocolate chips.
6
|
Pour the batter into a lined loaf pan and smooth the top. Sprinkle the remaining 40 g chocolate chips over the surface. Bake at 175–180°C for about 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter). Let cool before slicing for clean cuts.

Tips & Tricks (5)
- Banana Ripeness is Critical 🍌Use bananas with brown spots and soft flesh—they're sweeter and contain more moisture, creating the signature moist texture while reducing the need for extra liquid.
- Bloom Your Cocoa Powder ☕Whisk cocoa powder with a small amount of hot water or melted chocolate before adding to the batter to intensify the chocolate flavor and eliminate any raw powder taste.
- Don't Overmix After Chocolate Addition 🍫Fold in chocolate chips and dark chocolate pieces last using a spatula with minimal strokes to prevent overdeveloping gluten, which keeps the crumb tender and fudgy rather than dense.
- Tent With Foil to Prevent Over-Browning 📋If the top browns too quickly during baking, loosely cover with foil while the interior continues cooking, ensuring even texture throughout without a burnt exterior.
- Cool in Pan Before Slicing 🧊Let the bread cool in the loaf pan for 15-20 minutes before turning out—this allows the crumb to set properly, preventing crumbling and ensuring clean, beautiful slices.
