Instructions
1
In a large bowl, mash the ripe bananas until smooth.
2
In a saucepan over low heat, melt the butter together with the dark chocolate. Stir until smooth. Pour the warm chocolate-butter mixture over the mashed bananas.
3
Add brown sugar, white sugar, oil, eggs, and vanilla extract. Mix until fully combined and smooth.
4
In a separate bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. (Do not add the sugar here.) Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
5
Gently fold in 70 g chocolate chips.
6
Pour the batter into a lined loaf pan and smooth the top. Sprinkle the remaining 40 g chocolate chips over the surface. Bake at 175–180°C for about 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter). Let cool before slicing for clean cuts.

Tips & Tricks (5)
- Bloom Your Cocoa Powder 🍫Whisk cocoa powder with hot water or melted butter before adding to the batter to intensify chocolate flavor and eliminate any bitter, dusty notes.
- Choose Ripe Bananas Strategically 🍌Use bananas with brown speckles that are soft and fragrant—they provide maximum sweetness and moisture, allowing you to reduce added sugar slightly for better brownie texture.
- Temper Your Chocolate Properly 🌡️Cool melted dark chocolate to 90-100°F before mixing with wet ingredients to prevent the eggs from scrambling and ensure a fudgy, cohesive crumb structure.
- Don't Overmix the Batter ✋Fold ingredients together gently until just combined after adding flour—overmixing develops gluten and creates a tough, cake-like texture instead of the desired dense, brownie-like consistency.
- Underbake for Fudgy Centers 🕐Remove from the oven when a toothpick inserted in the center comes out with a few moist crumbs (not clean)—carryover cooking will set the edges while keeping the middle gloriously fudgy.
