Ingredients

  • 3 - ripe bananas
  • 60 grams - brown sugar
  • 100 g scant - white sugar
  • 100 grams - unsalted butter
  • 60 grams - dark chocolate
  • 80 grams - neutral oil
  • 2 - large eggs
  • 1 tsp - vanilla extract
  • 200 grams - all-purpose flour
  • 45 grams - cocoa powder
  • 1 tsp packet - baking powder
  • 1 tsp - baking soda
  • ½ tsp - salt
  • 70 grams - chocolate chips

Instructions

  1. In a large bowl, mash the ripe bananas until smooth.
  2. In a saucepan over low heat, melt the butter together with the dark chocolate. Stir until smooth. Pour the warm chocolate-butter mixture over the mashed bananas.
  3. Add brown sugar, white sugar, oil, eggs, and vanilla extract. Mix until fully combined and smooth.
  4. In a separate bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. (Do not add the sugar here.) Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Gently fold in 70 g chocolate chips.
  6. Pour the batter into a lined loaf pan and smooth the top. Sprinkle the remaining 40 g chocolate chips over the surface. Bake at 175–180°C for about 50–60 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter). Let cool before slicing for clean cuts.
