Ingredients

  • 2 - brownies
  • 6 tablespoons - coconut oil
  • ⅔ cup - coconut sugar
  • 1 - egg
  • 1 tsp - vanilla extract
  • 2 ½ cups - almond flour
  • ½ tsp - baking soda
  • ½ tsp - sea salt
  • ⅔ cup - dark chocolate chips

Instructions

  1. First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  2. In the bowl of a stand mixer, beat together coconut oil and coconut sugar. Beat for 2 to 3 minutes or until no clumps of coconut oil remain.
  3. Add in the egg and vanilla. Beat until combined.
  4. Then, add in almond flour, baking soda and pinch of sea salt. Stir to combine.
  5. Fold in chocolate chips.
  6. Use a cookie scoop to scoop balls of dough onto lined pan.
  7. Use your thumb to make an indent in the center of each ball of dough. Place a cube of brownie in each. Then, take more dough and enclose the brownie.
  8. Repeat for the remaining cookie dough.
  9. Bake for 10 to 12 minutes or until the edges are set.
  10. Finally, remove from the oven. Allow the cookies to cool on the pan for 10 minutes before carefully removing to a wire rack.
