Instructions
1
Wash the eggplant, cut it into small cubes, mix with a teaspoon of salt and let it stand for 10 to 30 minutes.
2
Meanwhile, wash the tomatoes, halve or quarter them, and place them in a large bowl. Peel the shallot and garlic and finely dice both. Heat a teaspoon of oil in a pan and sauté the diced shallot and garlic with a pinch of salt.
3
Once the shallots are translucent, put the shallots, garlic and tomatoes into a salad bowl and set aside briefly.
4
Place the diced eggplant on a clean tea towel or paper towel and pat off the salt and water. Return the pan to the stove and fry the eggplant in it with two teaspoons of oil for about 5 minutes over medium-high heat, until it is soft and juicy and has developed a light golden-brown color.
5
Meanwhile, wash the basil and cut it into thin strips. Drain the beans, rinse them with running water, and let them drain well.
6
Add the diced aubergine, basil, beans and the remaining oil (about one tablespoon) to the salad and season with salt and pepper.

Tips & Tricks (5)
- Salt Eggplant Before Cooking 🍆Cut eggplant into cubes, toss with salt, and let sit for 15 minutes to draw out excess moisture, then pat dry before sautéing for better browning and less oil absorption.
- Toast Garlic and Shallots Separately 🧄Infuse your olive oil with minced garlic and shallots over low heat for 2-3 minutes before adding other ingredients to develop a deep, sweet flavor base without burning.
- Warm the Beans Gently 🫘Heat canned cannellini beans separately in warm olive oil rather than adding cold beans directly, allowing them to absorb the flavors and reach the perfect temperature throughout.
- Add Basil at the Perfect Moment 🌿Tear fresh basil by hand (not cut) and fold it in just before serving to preserve its delicate oils and vibrant flavor rather than releasing bitter compounds from bruising.
- High-Quality Extra Virgin Olive Oil Matters 🫒Use premium extra virgin olive oil as a finishing drizzle after cooking to capture its fruity, peppery notes, since heat diminishes its complexity—save budget olive oil for the sauté.
