Instructions
1
Add the oil to a large pan, add the onions, and cook for 2-3 minutes while stirring until slightly soft. Add the chicken, garlic powder, paprika, Worcestershire sauce, and BBQ sauce. Mix together until everything is coated. Turn off the heat and set aside.
2
In a microwaveable bowl, add the butter, garlic powder, and dried parsley and microwave for 10-30 seconds, or just until melted. Place the 8 pieces of bread on parchment paper and spread the butter mixture on only one side of all the pieces of bread with a baster.
3
Flip each piece of bread over, butter side down, and add a slice of cheese to 4 of the slices. Then, add the chicken mixture on top of each cheese slice, dividing it evenly. Place 4 more cheese slices on top of each one. Next, place the other pieces of bread on top of the cheese; make sure the buttered sides are facing out, not in.
4
Spray a large pan with nonstick cooking oil and cook the grilled cheese over medium to low heat for about 3-4 minutes on each side, or until you get the color you want on the bread. Slice, serve, and enjoy!

Tips & Tricks (5)
- Butter Your Brioche Strategically 🧈Spread butter on the outside of the bread only, then add a thin layer of mayo or softened butter on the inside to create a moisture barrier that prevents the bread from getting soggy while the cheese melts.
- Pre-Warm Your Cheese 🧀Warm the gouda slices in the pan for 10 seconds before assembling the sandwich to ensure it starts melting immediately, creating a cohesive, creamy texture that binds all ingredients together.
- Balance Your Sauce Ratio 🔥Toss your shredded chicken with buffalo sauce before assembly, using just enough to coat without making it wet—excess liquid will steam the bread and prevent proper browning and crispiness.
- Toast Bread Separately First 🍞Lightly toast the brioche in a dry pan for 30 seconds per side before adding butter and assembling—this creates a protective barrier that prevents sogginess while keeping the interior tender.
- Layer Red Onion Thinly & Strategically 🧅Slice red onions paper-thin and layer them directly against the bread (not the cheese) so they soften slightly from residual heat without becoming mushy or overwhelming the delicate brioche texture.
