In a separate bowl, whisk together the flour, baking soda, and salt. Add to the combined wet ingredients and mix at low speed just until combined. Fold in the butterscotch chips and chopped pecans.

Spoon batter into muffin tins lined with parchment liners ¾ full. Top with additional pecans, if desired. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. Top with additional butterscotch chips right after baking.

Tips & Tricks (5)
- Banana Ripeness Magic 🍌Use bananas that are overripe with deep brown or black spots for maximum sweetness and moisture in your muffins.
- Butterscotch Chip Distribution 🧁Toss butterscotch chips in a tablespoon of flour before folding into the batter to prevent them from sinking to the bottom of the muffins.
- Pecan Toasting Technique 🥜Lightly toast pecans in a dry skillet for 2-3 minutes before adding to the batter to enhance their nutty flavor and provide extra crunch.
- Muffin Moisture Hack 💦Do not overmix the batter - mix just until ingredients are combined to ensure tender, moist muffins with a soft crumb.
- Room Temperature Ingredients 🌡️Bring eggs and butter to room temperature before mixing to create a smoother, more evenly incorporated batter that rises better.
