Cajun Shrimp & Sausage Pasta
Instructions
1
Cook pasta in salted boiling water until al dente. Reserve 1/4 cup pasta water, then drain.
2
In a skillet, heat butter and olive oil over medium heat.
3
Season shrimp with Cajun seasoning, salt, pepper, garlic powder, onion powder, and paprika. Sauté for 2–3 minutes per side until cooked through. Remove and set aside.
4
Add diced onion to the skillet and season with salt and pepper. Cook until softened, then add minced garlic and cook for 1–2 more minutes.
5
Add sliced Cajun sausage and cook until slightly browned.
6
Pour in heavy cream and bring to a simmer. Season again with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
7
Stir in Parmesan cheese and let melt. Add the pasta and a splash of reserved pasta water to thin the sauce as needed.
8
Add shrimp back into the skillet along with chopped parsley. Stir everything to combine.
9
Serve hot, topped with extra Parmesan and parsley.

Tips & Tricks (5)
- Sear Sausage First for Depth 🔥Brown the Cajun sausage in olive oil before adding other ingredients to develop a flavorful fond that will enrich your entire sauce and create layers of smoky, complex taste.
- Cook Shrimp Last to Prevent Rubberness 🦐Add shrimp only in the final 2-3 minutes of cooking—they cook rapidly and become tough and rubbery if overcooked, so timing is critical for tender, succulent results.
- Use Pasta Water as Liquid Gold 💧Reserve pasta water before draining and use it to adjust your cream sauce consistency—the starch helps emulsify the sauce and creates a silky finish that clings perfectly to the pasta.
- Bloom Spices in Fat First 🌶️Toast your Cajun seasoning, paprika, onion powder, and garlic powder in butter or oil for 30 seconds before adding liquids to unlock their full aromatic potential and prevent raw, dusty flavors.
- Finish with Cold Butter for Richness 🧈Stir in a knob of cold unsalted butter off the heat at the very end to create an ultra-silky, luxurious sauce with superior mouthfeel and shine.
