Ingredients

  • 3 - sweet onions
  • 1 tbsp - olive oil
  • 3 cups - cooked chickpeas
  • 3 tablespoons - aquafaba
  • ½ cup - tahini
  • ¼ cup - olive oil
  • 2 cloves - garlic
  • 1 - lemon
  • 1 tsp - cumin
  • ½ tsp - salt

Instructions

  1. To caramelize onions, heat oil in a large skillet over medium heat. Add the onions and let them start sweating. Stir in a pinch of salt and reduce heat to low. Cook the onions for about 30 minutes, or until they are a deep golden brown, stirring every 10 minutes or so.
  2. Place the hummus ingredients in a food processor and blend until completely smooth. You may need to scrape down the sides a couple times to get everything incorporated.
  3. Transfer the hummus to a serving bowl, stir in about a quarter of the caramelized onions, then top with the remaining or desired amount.
  4. Serve hummus with warm pita, crackers, and fresh vegetables like sliced cucumber, celery, radish, and bell peppers.
  5. Enjoy immediately or store in an airtight container in the refrigerator for up to one week.
