Caramelized Onion Hummus

To caramelize onions, heat oil in a large skillet over medium heat. Add the onions and let them start sweating. Stir in a pinch of salt and reduce heat to low. Cook the onions for about 30 minutes, or until they are a deep golden brown, stirring every 10 minutes or so.

Place the hummus ingredients in a food processor and blend until completely smooth. You may need to scrape down the sides a couple times to get everything incorporated.

Transfer the hummus to a serving bowl, stir in about a quarter of the caramelized onions, then top with the remaining or desired amount.

Serve hummus with warm pita, crackers, and fresh vegetables like sliced cucumber, celery, radish, and bell peppers.
