Instructions
1
Preheat the oven to 400℉. Line a large baking sheet with parchment paper.
2
In a large mixing bowl, whisk together the flour, brown sugar, baking powder, cinnamon, ginger, and nutmeg.
3
Add the cubes of cold butter to the flour mixture and use a pastry cutter to cut the butter in until the pieces are the size of peas.
4
In a small bowl, whisk together the whipping cream, egg, vanilla, and shredded carrots. Add to the flour/butter mixture and mix until a loose dough begins to form.
5
Gently knead and fold the mixture until the dough comes together. Separate the dough into 3 equal pieces. Form each piece into a round around 3-4 inches in diameter and 1 ½ inches thick. Cut each round into quarters. Arrange all 12 scones on the prepared baking sheet.
6
Bake in the preheated oven for 12-16 minutes or until golden brown. While the scones are cooling slightly, make the icing by briskly whisking together the softened cream cheese, butter, powdered sugar, vanilla, and enough cream to make a spreadable icing. Spread over the slightly cooled scones. Enjoy!

Tips & Tricks (5)
- Keep Butter Ice-Cold 🧊Use butter straight from the freezer and cut into small cubes to create flaky, tender scones; cold butter creates steam pockets that produce the desired texture.
- Squeeze Out Carrot Moisture 🥕After shredding carrots, wrap them in a clean kitchen towel and squeeze firmly to remove excess liquid, preventing soggy scones and ensuring proper texture.
- Don't Overwork the Dough 🙌Mix ingredients just until combined—overmixing develops gluten and results in tough, dense scones instead of light and crumbly ones.
- Bloom Your Spices 🌟Whisk cinnamon, ginger, and nutmeg together with the dry ingredients first to ensure even distribution and maximize their warm, aromatic flavor throughout each scone.
- Chill Dough Before Baking ❄️Refrigerate shaped scones for 15-20 minutes before baking to help them rise evenly and maintain their shape without spreading.
