Chipotle Cashew Dressing
This chipotle cashew dressing is creamy, smoky, and packed with flavor. Made with soaked cashews instead of mayonnaise or cream, it's a delicious dairy-free dressing for salads, grain bowls, wraps, or as a dip for roasted vegetables. Don't skip soaking the cashews—it makes all the difference when it comes to achieving a silky smooth texture.

Place the cashews in a bowl and cover them with boiling water. Let them soak for 30 minutes.
- Step 2
Drain the cashews and transfer them to a blender. Add the water, nutritional yeast, soy sauce, honey, chili, and the lime juice.
- Step 3
Blend until completely smooth and creamy. The dressing should be pourable but still rich and creamy. If needed, add a little more water until it reaches your desired consistency.
- Step 4
Taste and adjust the dressing before serving. Add more soy sauce for saltiness, lime juice or rice vinegar for acidity, honey for sweetness, or chipotle sauce or sriracha for extra heat. Serve immediately with salads or grain bowls, or store the dressing in a sealed jar in the refrigerator for up to 5 days.
