Instructions
1
In a skillet over medium heat, cook the ground beef until well-browned and no pink remains, about 5-7 minutes.
2
Add the minced onion and cook for 4 minute until translucent, then add the garlic and continue cooking for 1 minute. (Add oil as needed to prevent the onions and garlic from burning.)
3
Stir in the tomato paste and broth until well-distributed.
4
Add the uncooked pasta and increase heat to medium-high until simmering.
5
Cover the skillet and reduce heat to medium until pasta is fully cooked, about 5 minutes, stirring occasionally.
6
Distribute the cream cheese over the pasta and pour in the milk.
7
Season with Italian Seasoning, salt and pepper and cook, stirring often, until cream cheese is completely melted and incorporated.
8
Stir in the cheddar cheese until just melted and serve immediately.

Tips & Tricks (5)
- Brown the Beef Properly 🍖Use high heat and break the ground beef into small pieces while cooking, allowing it to develop a rich, caramelized crust that adds depth to the entire dish.
- Bloom Your Tomato Paste 🍅Cook the tomato paste in the rendered beef fat for 1-2 minutes before adding liquid—this intensifies its umami flavor and prevents a one-dimensional taste.
- Cook Pasta Al Dente 🍝Slightly undercook the macaroni by 1-2 minutes before mixing with the sauce, as it will continue absorbing liquid and soften without becoming mushy.
- Emulsify with Cream Cheese 🧀Add cream cheese off-heat and stir gently to create a silky, luxurious sauce that won't separate, while the cheddar adds sharp flavor without graininess.
- Reserve Pasta Water Strategically 💧Save 1 cup of starchy pasta cooking water to adjust the sauce consistency at the end, creating the perfect creamy texture without over-diluting flavors.
