Instructions

Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.

Season chicken with salt, pepper, garlic powder, onion powder, paprika, and dried basil.

In a pan over medium heat, add olive oil and cook chicken for 5–7 minutes on each side until fully cooked. Remove and set aside.

In the same pan, add diced onion, minced garlic, and cherry tomatoes. Cook until softened and blistered, then mash tomatoes gently.

Add chopped fresh basil, chicken broth, and heavy cream. Bring to a simmer.

Season with the same blend used on the chicken. Stir and simmer for a few minutes.

Add cooked pasta and chicken back into the pan along with Parmesan, mozzarella, and a splash of pasta water.

Mix well until the sauce is creamy. Add more cheese or pasta water as needed.

Serve hot, topped with extra basil or Parmesan if desired.
