Instructions
1
In a large bowl, beat together the cream cheese, powdered icing sugar, vanilla extract and greek yogurt until smooth and well-combined.
2
Lay a few wontons out on a cutting board and place a wet paper towel over the remaining wonton wrappers to keep them from drying out.
3
Scoop 1 teaspoon of the cheesecake filling and 1 teaspoon of the cherry pie filling onto the center of each wonton wrapper.
4
Brush the edges of each wonton wrapper with a bit of water and then folder over into a triangle shape, pressing to seal and remove all air from the wonton.
5
Repeat with all wontons wrappers.
6
Place the cooking oil in a heavy pan or dutch oven and heat to 300F.
7
Fry the wontons 3-4 at a time until lightly golden, flipping over halfway through cooking, about 3 minutes each batch.
8
Repeat until all wontons are fried.

Tips & Tricks (5)
- Seal the Filling Edges 🔒Wet your finger with water and run it along all edges of the wonton wrapper before folding to create a perfect seal and prevent filling from leaking during frying.
- Chill Your Filling First 🧊Refrigerate the cream cheese mixture for at least 30 minutes before filling wontons so it's firm enough to handle and won't ooze out during cooking.
- Oil Temperature is Critical 🌡️Maintain oil at 350°F (175°C) for perfectly golden, crispy wontons - use a thermometer to avoid soggy results from oil that's too cool or burnt exteriors from excessive heat.
- Drain on Paper Towels Immediately 🧻Place fried wontons on paper towels within seconds of removing from oil to absorb excess grease while they're still hot and maintain maximum crispiness.
- Fold in a Triangle First 🔺Start by folding the wonton wrapper diagonally into a triangle, then bring the two pointed corners together and press firmly - this classic technique creates the most secure seal and even cooking.
