Tips & Tricks (5)
- Pound Your Chicken Evenly 🔨Pound chicken breasts to uniform thickness (about ¾ inch) to ensure even cooking and prevent dry edges while centers remain undercooked.
- Master the Pasta Water Emulsion 💧Reserve starchy pasta water before draining and add it gradually to your sauce—it acts as a natural emulsifier that creates a silky, cohesive Alfredo rather than a greasy one.
- Bloom Your Garlic in Butter 🧈Toast minced garlic in melted butter for 30-45 seconds before adding cream to unlock deeper, more complex flavors and prevent harsh raw garlic taste.
- Keep Sauce Off Heat When Adding Cheese 🧀Remove the pan from heat before stirring in grated Parmesan to prevent the cheese from clumping or becoming stringy—the residual heat will melt it perfectly.
- Sear Chicken Skin-Side First 🍗If using bone-in chicken, start with skin-side down to render fat and achieve a golden, crispy exterior that adds richness to the final dish.
