Chicken Cordon Bleu Casserole
Instructions
1
Preheat oven to 350°F.
2
In a medium mixing bowl, whisk together the milk and egg.
3
Cut the chicken breasts into 1-inch pieces and add to the milk and egg mixture.
4
Spray a 9x13-inch baking dish with nonstick cooking spray and set aside. Mix the breadcrumbs, salt, and pepper together, then pour onto a large plate. Toss with the spoon to fully coat the chicken pieces with the breadcrumbs, then arrange in an even layer in the prepared baking dish
5
Arrange the cubed ham and cheese over the breaded chicken pieces.
6
In a small mixing bowl, whisk together the cream of chicken soup and milk.
7
Pour the soup mixture over the chicken, ham, and cheese. Cover the dish with aluminum foil.
8
Bake the casserole on middle rack of oven for 35 minutes.
9
Carefully remove the foil and continue baking until chicken is cooked through and top is lightly browned, about 10 minutes.
10
Check to see that casserole is done. Remove from oven or add time as needed.
11
Serve immediately. Leftovers can be stored in an airtight container for up to 1 week.

Tips & Tricks (5)
- Pound Chicken Evenly 🔨Pound chicken breasts to uniform ¼-inch thickness so they cook evenly and create the perfect pocket for ham and cheese filling without drying out.
- Double-Bread for Crunch 🥖Dip breaded chicken in milk again before the second panko coating to achieve an ultra-crispy, golden exterior that stays crunchy even after baking.
- Layer Strategically 🧀Place ham and Swiss cheese slightly off-center when assembling so they stay enclosed during cooking and create pockets of melted flavor throughout the casserole.
- Thin the Cream Sauce 🥣Mix the cream of chicken soup with equal parts milk to create a thinner sauce that distributes evenly and prevents the casserole from becoming dense or gluey.
- Don't Overbake 🕐Bake at 350°F for 30-35 minutes until the chicken reaches 165°F internally; overbaking will dry out the breasts and toughen the cheese layers.
