Ingredients

  • 2 pounds - boneless skinless chicken breasts
  • 1 tbsp - olive oil
  • 1 tsp - garlic powder
  • 1 tsp - onion powder
  • 1 tsp - cumin
  • ½ tsp - chili powder
  • ½ tsp - chipotle powder, or cayenne powder
  • 1 tbsp - lime juice
  • 4 cups - cauliflower rice
  • 1 tbsp - olive oil
  • pinch - sea salt
  • 1 tsp - lime juice
  • 1 - white onion
  • 1 - red pepper
  • avocado
  • salsa
  • cilantro

Instructions

  1. First, add the olive oil to a large skillet. Cut the chicken into 1 inch cubes. Once the oil is hot, add in the chicken pieces, garlic powder, onion powder, cumin, chili powder, chipotle powder, and lime juice. Stir until the chicken is well seasoned.
  2. Once the chicken is browned on all sides, but not fully cooked through, add the peppers and onions. Cook for 5 to 6 minutes, until the chicken is cooked through and the veggies are softened.
  3. Meanwhile, add the cauliflower rice, olive oil, sea salt, and lime juice to another skillet. Cook for 3 to 4 minutes, stirring, until warmed through.
  4. Finally, assemble the bowls. Add in the cauliflower rice, topped with chicken, peppers, and onions. Garnish with sliced avocado, salsa, and cilantro.
