Ingredients

  • 1 ¼ cups - Orzo
  • 3 cups - Grilled chicken breast
  • 1 ½ cups - Arugula
  • 1 cup - Grape tomatoes
  • ½ cup - Red bell pepper
  • ¼ cup - Red onion
  • 2 tablespoons - Fresh basil
  • 1 tsp - Fresh oregano
  • 2 tablespoons - Red wine vinegar
  • 1 tbsp - Extra virgin olive oil
  • ⅛ tsp - Salt
  • ⅛ tsp - Black pepper
  • 1 ½ ounces - Goat cheese

Instructions

  1. Cook pasta according to package directions, omitting salt and fat. Drain well.
  2. Combine pasta, chicken and the next six ingredients in a large bowl. Toss well
  3. Combine vinegar, oil, salt and black pepper in a small bowl, and combine with a whisk. Drizzle mixture over pasta.
  4. Toss well to coat. Sprinkle with cheese. Serve warm or cold.
