Chickpea Salad Sandwich is the perfect make-ahead lunch. Combine chickpeas with veggies, vegan yogurt, dijon mustard, apple cider vinegar, and fresh dill for a protein-packed meal. It's filling and tasty enough even meat eaters will enjoy it! It's one of my go-to lunches because of how fast it comes together and how well it stays for leftovers.

Ingredients

  •   - Toasted bread
  • 2 cans - chickpeas
  • ½ cup - celery
  • ½ cup - bell pepper
  •  cup - red onion
  •  cup - baby carrots
  • ¼ cup - vegan yogurt
  • 1 tbsp - dijon mustard
  • 1 tbsp - apple cider vinegar
  •   - Salt and pepper
  •   - Fresh dill

  1. Mash drained and rinsed chickpeas in a medium sized bowl then mix in chopped vegetables.
  2. Stir in remaining ingredients until well combined. Taste and adjust seasoning, if needed.
  3. Serve on toasted bread and garnish with fresh dill.
