Ingredients

  • ½ cup - olive oil
  • ¼ cup - apple cider vinegar
  • 3 tablespoons - coconut aminos
  • 2 tablespoons - maple syrup
  • 4 teaspoons - sesame oil
  • 2 teaspoons - ginger
  • 1 clove - garlic
  • ¼ tsp - sea salt
  • ⅛ tsp - black pepper

Instructions

  1. Place the 1/2 cup olive oil, vinegar, coconut aminos or soy sauce, maply syrup, sesame oil, ginger, garlic, salt and pepper in a small bowl and whisk to combine. Taste and adjust the seasoning as necessary.
  2. Heat the 2 tablespoons olive oil in a skillet over medium heat. Add the ramen noodles and almonds and toss to coat in the oil. Cook until golden, about 5-6 minutes, turning down the heat to medium low as necessary. Remove from heat and cool.
  3. Place the shredded chicken, Napa cabbage, purple cabbage, carrot, green onion and chopped cilantro in a large bowl. Toss with enough dressing to coat — you may not need it all.
  4. Top the salad with the crispy ramen noodles and almonds. Serve immediately and enjoy!
