
Chocolate Chip Molasses Cookies
Nothing says fall quite like deep molasses flavors married with warm spices! When you bake them in cookie form and throw in some chocolate, they're pure heaven. Ingredients
- 2 ½ cups - all-purpose flour
- ½ tsp - baking soda
- 2 teaspoons - cornstarch
- ¼ tsp - kosher salt
- 2 teaspoons - cinnamon
- ¼ tsp - cloves
- ¼ tsp - nutmeg
- ¼ tsp - ginger
- ¾ cup - unsalted butter
- ¾ cup - dark brown sugar
- ¼ cup - granulated sugar
- ¼ cup - unsulphured molasses
- 1 - egg
- 1 tsp - vanilla extract
- 6 ounces - chocolate
- granulated sugar
Instructions
- Preheat the oven to 350 degrees F (180 degrees C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cornstarch, salt, and spices. Set aside.
- In a large bowl, heat the butter in the microwave in 20 second increments until fully melted.
- Whisk in the sugars, then the molasses until fully combined.
- Next, whisk in the egg and vanilla until fully combined.
- Fold the dry ingredients into the wet until just combined.
- Fold in 150g of the chocolate.
- Using a 2 tablespoon cookie scoop, place the cookie dough on the prepared baking sheet about 2 inches apart.
- Roll each cookie dough ball in granulated sugar, then top each with chopped chocolate.
- Bake the cookies for about 10 minutes.
- Allow them to cool completely on the baking sheet.
