Instructions
1
|
Preheat oven to 350F. In a medium mixing bowl, combine applesauce, peanut butter, coconut oil, maple syrup, 3 tablespoons milk, and vanilla extract until smooth. Next, add the pancake mix and cinnamon, and mix until a dough forms that has a thick consistency similar to cookie dough. If the batter seems dry, add another tablespoon of milk. Add chocolate chips and mix.

Line a sheet pan with parchment paper or a silicone baking sheet. Evenly space 12 balls of dough onto the cookie sheet. Top with additional chocolate chips (optional) and then use your hand to press the dough balls into a flat cookie shape, approximately half an inch thick (cookies will puff up, not spread out). Bake for 13-15 minutes until golden brown on the edges.

Tips & Tricks (5)
- Pancake Mix Ratio Balance 🥣Use slightly less liquid than the pancake mix box calls for to create a thicker, cookie-like batter that holds its shape during baking instead of spreading thin.
- Coconut Oil Temperature Control 🥥Melt coconut oil completely and let it cool slightly before mixing into wet ingredients to prevent it from cooking the eggs and ensure even distribution throughout the dough.
- Banana Ripeness Matters 🍌Use very ripe bananas (with brown spots) for maximum sweetness and moisture, which reduces the need for extra sugar and creates a naturally soft, cake-like texture.
- Don't Overmix Your Dough 🥄Fold in chocolate chips gently at the end and stop mixing as soon as ingredients are combined to prevent gluten development, which keeps cookies tender and puffy rather than dense.
- Cool on Pan Strategy 🍪Let cookies rest on the baking sheet for 5 minutes after removing from the oven before transferring to a cooling rack, allowing them to set properly while retaining their soft, pillowy center.
