
Chocolate Chip Strawberry Breakfast Bars
These breakfast bars are everything I love about breakfast: warm, cozy, filled with fresh fruit and melted chocolate. I mean, what’s not to love? I love to meal prep on the weekends and I almost always make proteins and vegetables to have on hand for lunches and dinners. I wanted to meal prep something for breakfast too, and that’s when these bars were born. I used almond butter instead of flour in this recipe which makes these bars ooey and gooey. I hope you enjoy these as much as I did!

Ingredients
- 1 cup - creamy almond butter
- 1 - banana
- ¼ cup - ghee
- 3 tablespoons - honey
- ½ tsp - baking powder
- ⅔ cup - coconut flakes
- 3 - strawberries
- ½ cup - dark chocolate chips
Instructions
- Preheat oven to 350 and line a 9×9 baking pan with parchment paper.
- Add almond butter and banana to a large mixing bowl and combine. Then add ghee, honey, baking powder and coconut flakes and mix.
- Add batter to baking pan. Sprinkle chopped strawberries and chocolate chips on top.
- Bake 20-25 minutes or until toothpick inserted comes out clean. I did mine for 23 minutes.
