Preheat oven to 350F

Line two baking sheets with parchment paper or silicone baking mats.

Combine the chocolate cake mix, eggs and oil together until completely combined.

Portion the dough into 1-Tablespoon sized scoops.

Flatten each scoop and place a cherry in the center. Wrap the cookie dough around the cherry so that it is completely enclosed.

Place the sugar crystals in a small bowl and dip the cookie ball into the sugar crystals.

Place the cookie ball sugar-side up on the prepared baking mats.

Bake for 8-10 minutes.
