Cut the dates lengthwise and remove the pits. Place the dates side by side and one on top of the other on the bottom half of a piece of parchment paper. Fold the paper over the dates from the top and firmly flatten them with the bottom of a glass.

Fold the paper back down and transfer the dates, along with the paper, to a small board or a flat plate. Make sure the flattened date pieces are close together with as little space between them as possible.

Pour peanut butter over the dates and carefully spread it with a spatula or similar tool.

Place the chocolate and coconut oil in a bowl and melt in the microwave or over a hot water bath. Meanwhile, scatter optional ingredients such as nuts or pretzel sticks over the peanut butter.

Spread melted chocolate over the dates and sprinkle with coarse sea salt, if desired. Place the date bars in the freezer for 30 minutes or in the refrigerator for one hour, until the chocolate is completely firm.

Cut the date bars into 8 to 10 equal pieces with a knife and store them in a Tupperware container or similar in the refrigerator.
