Instructions
1
Cut the dates lengthwise and remove the pits. Place the dates side by side and one on top of the other on the bottom half of a piece of parchment paper. Fold the paper over the dates from the top and firmly flatten them with the bottom of a glass.
2
Fold the paper back down and transfer the dates, along with the paper, to a small board or a flat plate. Make sure the flattened date pieces are close together with as little space between them as possible.
3
Pour peanut butter over the dates and carefully spread it with a spatula or similar tool.
4
Place the chocolate and coconut oil in a bowl and melt in the microwave or over a hot water bath. Meanwhile, scatter optional ingredients such as nuts or pretzel sticks over the peanut butter.
5
Spread melted chocolate over the dates and sprinkle with coarse sea salt, if desired. Place the date bars in the freezer for 30 minutes or in the refrigerator for one hour, until the chocolate is completely firm.
6
Cut the date bars into 8 to 10 equal pieces with a knife and store them in a Tupperware container or similar in the refrigerator.

Tips & Tricks (5)
- Pit Your Dates Cleanly 🔪Use a small paring knife or cherry pitter to create a clean slit for removing the pit, keeping the date intact and creating a perfect pocket for your peanut butter filling.
- Temper Chocolate for Shine ✨Melt chocolate slowly over a double boiler and cool slightly to 88°F before dipping for a professional glossy finish and snap that prevents blooming and keeps treats fresh longer.
- Freeze Dates Before Dipping 🧊Chill filled dates for 30 minutes before chocolate coating so the peanut butter sets firmly, allowing for a thinner, cleaner chocolate shell and easier handling during the dipping process.
- Toast Nuts for Deeper Flavor 🌰Lightly toast your nuts in a dry pan at 350°F for 5-7 minutes before chopping and adding as toppings to amplify their natural oils and create a more complex, sophisticated taste.
- Balance Salt and Sweetness 🧂Apply coarse sea salt immediately after chocolate coating while still tacky, using just a pinch to create a sweet-salty contrast that enhances the chocolate and date flavors without overpowering.
