Chocolate Covered Strawberry Blended Overnight Oats

This decadent breakfast tastes like a chocolate covered strawberry but is high in protein and a great way to satisfy your sweet tooth. If you don't like the texture of regular overnight oats or just want to switch it up, then this is your sign to try blending them! It turns out super smooth and creamy. Every bite is filled with fresh strawberry flavor, and a rich dark chocolate ganache tops it all off.

Ingredients

  • 2 ½ cups - Strawberries
  • 1 cup - Oats
  • ¼ cup - Vanilla Protein Powder
  • 1 tbsp - chia seeds
  • ½ cup - Soy Milk, or milk of choice
  • ½ cup - Almond Milk Yogurt, or yogurt of choice
  • 1 tbsp - Pure Maple Syrup, or sweetener of choice
  • 1 tsp - Vanilla Extract
  • 2 tablespoons - Dark Chocolate Chips
  • 1 tbsp - Soy Milk, or milk of choice

Instructions

  1. Chop 1/2 cup strawberries and set aside.
  2. Add the remaining 2 cups strawberries to a high powered blender along with oats, protein powder, chia seeds, soy milk, yogurt, maple syrup, and vanilla. Blend until completely smooth, 1-2 minutes.
  3. Add the chopped strawberries to the bottom of your serving jars or bowls, then pour the oats mixture on top. Alternatively, stir the chopped strawberries into the oats mixture and then pour into your serving jars or bowls.
  4. Refrigerate overnight or at least 4 hours to thicken before making the ganache.
  5. For the ganache, add chocolate chips to a small bowl. Heat in the microwave in 30 second intervals, stirring in between, until melted and smooth. Add in soy milk and stir until smooth.
  6. Pour and spread the melted chocolate mixture over the overnight oats. Place in the freezer for about 15 minutes to set.
  7. Add more toppings if desired, like extra strawberries or granola for crunch, and enjoy!
