Ingredients

  • ½ cup - peanut butter
  • ¼ cup - coconut oil
  • ¼ cup - honey
  • ¼ cup - cocoa powder
  • ½ cup - unsweetened whey protein powder (optional)
  • 2 cups - ground almonds
  • 1 cup - coconut
  • ½ cup - pecans
  • ½ cup - dried cranberries
  • 2 tablespoons - chia seeds

Instructions

  1. Line a 9 X 13-inch pan with parchment paper, letting the parchment paper hang over the sides.
  2. In a medium saucepan over low heat, combine peanut butter, coconut oil, honey, and cocoa powder. Stir as mixture melts together, add whey protein (if using).
  3. In a large mixing bowl, measure ground almonds, shredded coconut, pecans, cranberries, and chia seeds. Add peanut butter mixture and stir together with a spatula.
  4. Transfer to prepared pan. Refrigerate for 2-3 hours. Cut into bars.
  5. Enjoy! Keep refrigerated to prevent melting.
