Instructions

1
|
Line two baking sheets with silicone baking mats or parchment paper. Set aside.
2
|
Place the butter, granulated sugar, and brown sugar in a medium bowl. Use a hand mixer to beat on medium speed until well combined, about 1 minute.
3
|
Add the eggs and vanilla extract and continue to beat until smooth, about 30 seconds.
4
|
Add the flour, cocoa, cornstarch, baking soda, and salt to the bowl. Beat on low speed, scraping the sides of the bowl with a rubber spatula as needed, until a smooth dough forms.
5
|
Preheat the oven to 350°F.
6
|
Divide the cookie dough into 30 balls, using roughly 1 1/2 tablespoons of dough for each, and arrange them spaced 1 1/2 inches apart on the baking sheets. Transfer the sheets to the freezer for 10-15 minutes. Alternately, freeze the dough balls on a small tray or large plate and transfer to the baking sheets after freezing.
7
|
Place the powdered sugar in a mixing bowl. Remove the dough balls from the freezer. Roll each cookie in the powdered sugar, creating a coating thick enough that no dough is visible, and place on the prepared baking sheets.
8
|
Bake the cookies on middle rack of oven until puffy, cracked, and opaque, 15-17 minutes.
9
|
Check to see that cookies are done. Remove from oven or add time as needed.
10
|
Allow the cookies to rest on the sheets for 5-10 minutes, then transfer to a wire rack to cool completely before serving.

Tips & Tricks (5)

  • Cocoa Powder Quality Matters 🍫
Use high-quality unsweetened cocoa powder for the most intense chocolate flavor - Dutch-processed cocoa works best for a deeper, richer taste in these crinkle cookies.
  • Chill Dough for Perfect Texture 🧊
Refrigerate the cookie dough for at least 2-3 hours before baking to prevent spreading and create a more concentrated, fudgy texture that holds its crinkle shape.
  • Powdered Sugar Coating Technique 🍪
Roll the cookie dough balls in granulated sugar first, then generously coat with powdered sugar to create the signature crackled, snow-like exterior with maximum visual appeal.
  • Room Temperature Ingredients Secret 🥚
Ensure eggs and butter are at room temperature to create a smoother, more evenly mixed dough that results in a more consistent cookie texture.
  • Precise Baking Time Trick ⏲️
Remove cookies from the oven when the edges are set but the centers still look slightly underbaked - they'll continue cooking on the hot baking sheet and maintain a wonderfully soft, fudgy center.
