Chocolate Glazed Banana Bread Donuts

We all know banana bread + chocolate = happiness. Whip this simple banana bread batter up in one bowl, bake it in a mini donut pan, then dip them in a rich chocolate glaze. This is easy, good, and they're the perfect excuse to use up those ripe banana laying on your kitchen counter!

Ingredients

  • 340 grams - mashed ripe bananas
  • 70 grams - butter
  • 80 grams - brown sugar
  • 75 grams - granulated sugar
  • 1 - egg
  • 1 tsp - vanilla
  • 180 grams - all-purpose flour
  • 1 tsp - baking powder
  • 1 tsp - baking soda
  • ½ tsp - salt
  • 1 tsp - cinnamon
  • 56 grams - heavy cream
  • 56 grams - chocolate

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C) and grease a mini metal donut pan with melted butter, oil, or baking spray.
  2. In a large bowl whisk together the mashed banana, melted butter, brown sugar, and granulated sugar.
  3. Mix in the egg and vanilla.
  4. Whisk in the flour, baking powder, baking soda, salt, and cinnamon until fully combined.
  5. Transfer the batter to a piping bag, then snip the end off and pipe the batter into each donut cavity about half way full. Careful not to over-fill! Alternatively, you can spoon the batter into the cavities, but it will be a little messy.
  6. Bake the donuts for about 10 minutes or until a toothpick inserted comes out clean.
  7. Transfer donuts to wire rack to cool completely before dipping in the chocolate glaze.
  8. In a small bowl, heat the heavy cream in the microwave for about 30 seconds.
  9. Add in the chocolate and stir until fully combined and smooth.
