Instructions
1
Line an 8×8" square baking pan with foil and spray lightly with cooking spray. Set aside.
2
Place a sauté pan with about 2 inches of water over medium heat and bring to a simmer. Place 1 cup of the chocolate chips in a heat proof bowl with 1 tablespoon of the coconut oil and 1/2 of the can of the sweetened condensed milk. Place the bowl into the pan of simmering water and reduce heat to low (this is your double boiler).
3
Stir the chocolate mixture with a rubber scraper until smooth, then add 1/4 cup of the chopped peanuts and stir until combined.
4
Pour the chocolate mixture into the prepared pan and spread evenly.
5
Place the peanut butter and remaining coconut oil in a microwaveable bowl and microwave for 30 seconds or until melted, then stir to combine.
6
Stir in the remaining sweetened condensed milk until well incorporated.
7
Pour the peanut butter fudge mixture over the chocolate mixture and spread evenly.
8
Press the remaining 1/2 cup chocolate chips and 1/4 cup of chopped peanuts into the top, and chill for a minimum of 2 hours or until set. Once chilled, lift the fudge out of the pan and remove the foil. Place on a cutting board and cut into squares. Serve and enjoy!

Tips & Tricks (5)
- Tempering Chocolate for Shine ✨Melt chocolate chips with coconut oil at low heat (around 110°F), stirring constantly to achieve a glossy finish and prevent grainy texture in your final fudge.
- Sweetened Condensed Milk Consistency 🥛Room-temperature sweetened condensed milk blends more smoothly into peanut butter layers; gently warm the can in hot water for 2-3 minutes before opening if it's been refrigerated.
- Peanut Positioning Strategy 🥜Press salted peanuts into the warm peanut butter layer rather than the final chocolate layer so they stay firmly embedded and provide better texture contrast throughout each bite.
- Chilling Timing for Perfect Cuts 🧊Refrigerate for at least 2 hours until completely firm, then let fudge sit at room temperature for 3-5 minutes before cutting with a warm knife to achieve clean, square pieces.
- Layer Cooling Between Steps ❄️Allow each chocolate layer to set for 10-15 minutes in the refrigerator before adding the next layer; this prevents mixing and creates distinct, visually appealing stratified layers.
