Instructions
1
|
Line an 8×8" square baking pan with foil and spray lightly with cooking spray. Set aside.
2
|
Place a sauté pan with about 2 inches of water over medium heat and bring to a simmer. Place 1 cup of the chocolate chips in a heat proof bowl with 1 tablespoon of the coconut oil and 1/2 of the can of the sweetened condensed milk. Place the bowl into the pan of simmering water and reduce heat to low (this is your double boiler).
3
|
Stir the chocolate mixture with a rubber scraper until smooth, then add 1/4 cup of the chopped peanuts and stir until combined.
4
|
Pour the chocolate mixture into the prepared pan and spread evenly.
5
|
Place the peanut butter and remaining coconut oil in a microwaveable bowl and microwave for 30 seconds or until melted, then stir to combine.
6
|
Stir in the remaining sweetened condensed milk until well incorporated.
7
|
Pour the peanut butter fudge mixture over the chocolate mixture and spread evenly.
8
|
Press the remaining 1/2 cup chocolate chips and 1/4 cup of chopped peanuts into the top, and chill for a minimum of 2 hours or until set. Once chilled, lift the fudge out of the pan and remove the foil. Place on a cutting board and cut into squares. Serve and enjoy!

Tips & Tricks (5)
- Chocolate Melting Mastery 🍫Use a double boiler or microwave in 30-second intervals, stirring between each burst to prevent chocolate from burning and ensure a smooth, glossy texture.
- Layering Like a Pro 🥜Chill the first chocolate layer for 10-15 minutes before adding the peanut butter layer to create clean, distinct and visually appealing fudge layers.
- Coconut Oil Magic 🥥Use room temperature coconut oil to help bind ingredients and create a smoother, more stable fudge that sets perfectly at room temperature.
- Salted Nut Technique 🧂Lightly toast the salted peanuts in a dry skillet for 2-3 minutes before adding to enhance their nutty flavor and add a delightful crunch.
- Perfect Cutting Trick 🔪Run your knife under hot water and dry before cutting to create clean, precise fudge squares without crumbling.
