Instructions

1

Preheat the oven to 200 degrees and pour the Chex and popcorn into large bowls.
2
|
Make the caramel sauce by adding the butter, brown sugar, corn syrup, and salt to a small saucepan.
3
|
Cook over medium heat, stirring constantly.
4
|
After the butter is melted, allow the mixture to simmer for 5 minutes, stirring the whole time.
5
|
Remove the pan from heat and add the baking soda.
6
|
Stir to mix the baking soda into the other ingredients, then immediately pour the mixture over the Chex and popcorn.
7
|
Carefully stir the cereal and popcorn until it’s fully coated in the caramel sauce.
8
|
Spread the mixture evenly over 2 baking sheets and top with Christmas sprinkles, if desired.
9
|
Place the pans in the oven to bake for 1 hour.
10
|
When the cook time is up, remove the pans from the oven and allow to cool completely.
11
|
Top with M&Ms and mini marshmallows, then transfer to a serving bowl or airtight container.

Tips & Tricks (5)

  • Toast Your Cereal First 🥣
Lightly toast the Chex cereal in a dry skillet for 2-3 minutes before mixing to enhance its nutty flavor and prevent sogginess from the butter mixture.
  • Add Marshmallows Last ✨
Fold in mini marshmallows and M&Ms after the mixture has cooled to room temperature to prevent them from melting and clumping together with the other ingredients.
  • Use Baking Soda for Crispness 🧪
Don't skip the baking soda—it neutralizes the acidic brown sugar and helps create an extra crispy, light texture that prevents the mix from becoming dense or chewy.
  • Spread Thin While Warm 📋
Spread the coated mixture in a single layer on parchment paper immediately after removing from heat, stirring occasionally as it cools to ensure even coating and prevent clumping.
  • Store with Silica Packets 🏺
Place food-grade silica gel packets in your airtight storage container to absorb moisture and keep your Chex mix crispy and fresh for up to 2 weeks.
