Yes, easy recipe and tastes great. I served it with the baked zucchini & baked halibut

Forget about Chipotle’s Cilantro Lime Rice and make your own! This recipe is bursting with fresh lime and cilantro flavor, and it’s perfect in burrito bowls or as a side dish for tacos, enchiladas and more!

Heat the oil in medium sauce pan over medium heat. Add the rice and cook, stirring often, for 2-3 minutes or until lightly golden. Add the salt and water, and bring to a boil. Cover and reduce the heat to medium low and simmer for 20 minutes. When the rice is done, remove from heat and let stand covered for 10 minutes.
Fluff the rice gently with a fork, then add the lime zest, lime juice and cilantro and mix in with your fork just until combined. Serve and enjoy!
