
Cilantro Lime Rice

Ingredients
- 2 tablespoons - oil
- 1 cup - long grain white rice
- 2 cups - water
- ¾ tsp - sea salt
- 1 tbsp - lime zest
- 3 tablespoons - fresh lime juice
- ¼ cup - cilantro
Instructions
- Heat the oil in medium sauce pan over medium heat. Add the rice and cook, stirring often, for 2-3 minutes or until lightly golden. Add the salt and water, and bring to a boil. Cover and reduce the heat to medium low and simmer for 20 minutes. When the rice is done, remove from heat and let stand covered for 10 minutes.
- Fluff the rice gently with a fork, then add the lime zest, lime juice and cilantro and mix in with your fork just until combined. Serve and enjoy!
