I saw these Almond Coconut Date Rolls at the store for a rather ridiculous price. I took a quick mental note of the ingredients and decided to try making them at home. As it turns out, they’re SUPER easy to make! Basically just process all the ingredients in a food processor for a minute, roll them up into little balls, and let them sit in the fridge or freezer for a bit to harden. Easy!

Tips & Tricks (5)
- Pulse, Don't Purée 🔄Use short pulses in the food processor rather than continuous blending to maintain texture—you want a chunky mixture, not a smooth paste, for the best bite and visual appeal.
- Warm Your Coconut Oil 🥥Slightly warm the coconut oil before processing so it acts as a binding agent more effectively, creating rolls that hold together better and have a superior texture.
- Soak Dates for Optimal Texture 💧Soak your dates in warm water for 10 minutes before processing to soften them, ensuring they blend smoothly and distribute evenly throughout the mixture for consistent rolls.
- Toast Your Almonds First 🔆Lightly toast the almonds for 5-7 minutes before adding them to deepen their nutty flavor and add complexity that elevates these simple rolls from good to gourmet.
- Chill Between Shaping Sessions ❄️Refrigerate the mixture for 15-20 minutes before rolling into balls—this prevents sticking and makes shaping easier, plus the cold mixture holds its shape better during final freezing.
