Ingredients

  • 2 cup - old fashioned rolled oats
  • 2 tablespoon - chia seeds
  • 2 ½ cup - coconut milk sub with your favorite dairy or non-dairy milk
  • 4 tablespoon - maple syrup sub with your favorite sweetener
  • 1 cup - plain Greek yogurt see note
  •  cup - unsweetened shredded coconut sub with whatever coconut you have on hand
  •   - coconut flakes

  1. Place the oats, chia seeds, coconut milk, and maple syrup in a large bowl and stir to combine. Cover with plastic wrap and chill for a minimum of 3 hours or overnight.
  2. In the morning, stir the mixture well and add additional milk to loosen the oats if they are too thick. Stir in the Greek yogurt and shredded coconut, serve and enjoy!
