In a medium mixing bowl, stir together all ingredients for the frozen yogurt filling, except for chocolate chips, until completely smooth with no lumps. Stir in chocolate chips.

Transfer the mixture into a popsicle mold and add popsicle sticks. Cover and place in freezer for at least 4 hours or until solid.

For the chocolate coating, melt chocolate chips with coconut oil in the microwave in 30 second intervals, stirring between, until smooth.

Remove frozen yogurt pops from the freezer and dip in chocolate, letting excess chocolate drip off. Place on a parchment paper lined tray. The chocolate will harden fast. Drizzle with more melted chocolate and sprinkle with optional flaky sea salt.

Place in freezer for 10 more minutes to set. Let thaw a few minutes and enjoy!
