Instructions
1
First, preheat oven to 375 degrees Fahrenheit. Line a baking pan with parchment paper.
2
In the bowl of a stand mixer, add cold butter, brown sugar and granulated sugar. Beat for 2 to 3 minutes or until no clumps of butter remain.
3
Then, add in egg and vanilla. Stir to combine.
4
Add in flour, baking soda and baking powder. Stir until a thick dough is formed. Add in 4 to 5 drops of food coloring. Mix until dough is uniformly blue.
5
Fold in white chocolate chips and chocolate chips.
6
Scoop out balls of dough. Place on lined sheet and flatten with hands.
7
Then, place an Oreo in the middle of each flattened dough ball.
8
Place another small flattened ball of dough on top of the Oreo. Use hands to fully enclose Oreo with cookie dough.
9
Bake for 9 to 10 minutes or until the cookies look barely set.
10
Finally, remove from oven. Allow cookies to cool on pan for 5 minutes. Then carefully remove to a wire rack.

Tips & Tricks (5)
- Chill Your Dough for Perfect Shape 🧊Refrigerate your dough for at least 30 minutes before baking to prevent spreading and maintain chewy edges with a soft center, plus it helps the blue food coloring stay vibrant.
- Brown Your Butter First 🧈Melt your cold butter and let it cool slightly before mixing to deepen the flavor and create richer, more complex taste notes that elevate these simple cookies.
- Toast Your Mix-ins Separately 🍫Lightly toast the chocolate chips and white chocolate chips in a dry pan for 2-3 minutes before folding in to intensify their flavors and prevent them from melting too quickly during baking.
- Underbake by One Minute ⏱️Remove cookies from the oven when the centers still look slightly underdone—they'll continue cooking on the hot baking sheet and achieve that signature golden, chewy texture you're after.
- Press Oreos Deep Into Centers 🍪Place whole Oreos into the center of each cookie portion and gently press down halfway through baking rather than before, so they stay intact and become deliciously gooey without sinking to the bottom.
