My Cottage Cheese Oat Pancakes are super easy to make for a protein-packed start to your day. They’re made in under 15 minutes with just 3 ingredients, making them the easiest light and fluffy pancakes ever. My guys love them. It is a perfect way to start your day.

Ingredients

  • ½ cup - quick cook oats
  • ½ cup - cottage cheese
  • 2 - eggs
  • 2 teaspoons - baking powder
  • ½ tsp - vanilla
  • butter or oil

Instructions

  1. Combine the oats, cottage cheese, eggs, baking powder and vanilla in a high powered, smoothie style blender. Puree until smooth, adding a splash of water or milk as needed.
  2. Set the batter aside to thicken slightly as you melt 1 teaspoon of butter or heat 1 teaspoon of oil in a frying pan over medium heat.
  3. Once the butter or oil is hot, portion out the pancake batter in ¼ cup increments.
  4. Cook for 3 minutes per side, until lightly golden and the pancake releases easily from the pan. Continue to cook on the opposite side for an additional 2-3 minutes.
  5. Repeat with all pancake batter, adding more butter or oil to the frying pan, as needed.
