Instructions
1
Preheat oven to 350F.
2
Line a muffin tray with cupcake liners and set aside.
3
In a large bowl, mix together the white cake mix and cotton candy soda for 2-3 minutes. Adjust the color with light blue food dye, if desired. (If using, make the cake batter a deeper blue than you want the finished cupcake to be as it will lighten with baking.)
4
Scoop the cupcake batter with a measuring cup into the cupcake liners.
5
Bake for 25-30 minutes, until an inserted toothpick comes out clean.
6
Allow the cupcakes to cool completely before frosting. (1 – 2 hours)
7
While waiting, place 1 cup of cotton candy soda in a saucepan and heat over medium-high heat until boiling. Reduce to medium-low and simmer until reduced to 1/4 cup (2 ounces of soda should remain). Allow to cool completely.
8
In a large bowl, beat together the butter and powdered icing sugar for 2 minutes, then add the reduced cotton candy soda. Beat to mix well, then add the milk as needed to achieve a spreadable texture. Adjust the color with blue food dye, if desired.
9
Scoop the frosting into a piping bag and snip off 1” of the tip.
10
Swirl the frosting onto the cupcakes and then around the edge to create a “basket” effect.
11
Smooth the ridges of the frosting with an offset spatula.
12
Fill the basket with cotton candy and then garnish with pop rocks.

Tips & Tricks (5)
- Stabilize Your Food Dye 🎨Mix light blue food dye with a small amount of vodka or clear extract instead of water to prevent color bleeding into the frosting and batter during baking.
- Add Pop Rocks at the Last Second 🍾Fold cotton candy pop rocks into frosting or sprinkle on top immediately before serving to preserve their crackling fizz and prevent them from dissolving into the moisture.
- Infuse Cotton Candy Soda Strategically 🥤Replace half the milk in your batter with cotton candy soda and reduce other liquid slightly to intensify flavor without creating a dense, overly-moist cupcake.
- Create a Cotton Candy Crumb Coat 🧁Before final frosting, lightly brush cooled cupcakes with cotton candy soda reduction to add moisture and deepen the flavor profile throughout.
- Layer Your Cotton Candy Topping 🎪Layer shredded cotton candy between frosting swirls rather than placing it on top to prevent premature melting while maintaining visual appeal and textural contrast.
